Sea bass is one of August's seasonal foods (along with sardines and scallops). Enjoy Elaine Lemm's recipe for Barbecued Sea Bass with Peaches
4 tbsp vegetable oil
4 tbsp Mirin or Chinese cooking wine
300g fresh, sea bass fillets
3 ripe peaches, halved and stoned
Mix together the vegetable oil and Mirin or cooking wine in a shallow dish. Place the fillets in the dish and keep to one side, for no longer than 5 minutes.
Brush the peach halves with oil and sprinkle with salt. Place the peaches on the hot barbecue, cut side down, and cook until golden (about 8 minutes).
Meanwhile, cook the fish on the barbecue, away from too fierce a heat, for 2-3 mins each side (depending on the thickness of the fillet) until tender; the fish should be cooked through but not dried out or burnt.
Squeeze the juice from the limes into a small bowl, then hollow out the lime halves. Fill these with equal quantities of soy sauce and the freshly squeezed lime juice for dipping.
Serve the fish, peaches and dip together once cooked. Simple and delicious.
